Ab-tastic Beef Satay Skewers

Last month when my Butcher Box arrived, it came with “Beef Satay”. So I search the internet for an amazing recipe. I grabbed bits of one, mixed with bits of another to create (what I believe) is the best recipe EVER!!!!  These Beef Satay Skewers are freakin’ mouth-watering, tangy, a wee-bit spicy and balance perfectly with the creamy peanut dipping sauce. And, this is the perfect meal to keep your tummy happy AND Jet Set Body Abs on-point!

1 pound skirt steak – cut in 1 inch strips
2 TBSP lemon juice
2 TBSP fresh ginger – grated
2 TBSP low sodium soy sauce
2 cloves garlic (I like the frozen ones from Trader Joe’s, makes it EASIER than grating garlic!)
1 TBSP chili paste
1 tsp fish sauce

wooden skewers – soaked in water

Peanut Dipping Sauce
4 TBSP creamy natural peanut butter
1 TBSP soy sauce
1 TBSP lemon juice
1 tsp fish sauce
1 tsp chili paste
warm water


1. In a glass bowl, whisk together all of the ingredients for the beef marinade. Add beef strips to the bowl and toss well to coat. Marinate at room temperature for 20-30 minutes or marinate in the refrigerator overnight.
2. Make the peanut dipping sauce by whisking together all ingredients in a small bowl. Slowly add about a tablespoon of warm water at a time, until you reach desired consistency. Set aside for yummy dipping later.
3. Carefully thread the beef strips on soaked skewers. Grill over medium-high heat for 2-3 minutes per side.
4. Let been skewers rest for 10 minutes before serving with peanut dipping sauce.
