Chicken Spring Roll1. Chicken Spring Rolls

Servings:  2
Ingredients
2 Chicken Breasts, cooked, diced
½ cup Shredded Carrots
3 Large Bibb Lettuce leaves, cut in half
1 TBSP Lemon Juice
1 tsp Garlic
1 tsp Siracha Hot Sauce
2 TBSP Greek Yogurt
6 Spring Roll Wrappers

Directions
1. In a medium bowl combine, yogurt, garlic, lemon juice and Siracha. Add the diced chicken and carrots.
2. Place a spring roll wrapper in a bowl of warm water for 30 seconds. Gently lay it flat on a damp kitchen towel. Place on piece of bibb lettuce in the bottom center of the wrapper. Add a large spoonful of the chicken mixture to the center of the lettuce.
3. Fold the wrapper like a burrito by rolling the bottom up, tuck in the sides and keep rolling until the wrap looks like a burrito and all sides are tucked in. Cut in half and  serve cold with low sodium soy sauce for dipping.

chicken soup2. Lemon Chicken Noodle Soup

Servings:  6
Ingredients
6 cup Chicken Broth, low-sodium
2 Lemons, juiced
1 Dried Bay Leaf
1 Carrots, peeled, sliced into ¼ inch pieces
1 Celery Stalk, sliced into ¼ inch pieces
2 cup DeBoles Organic Pasta, any style
2 cup Chicken Breast, cooked and diced into small pieces
1 cup Spinach
¼ cup Flat-leaf Parsley, chopped
Kosher Salt & Black Pepper

Directions
1. In a large stockpot, bring the chicken broth, lemon juice, bay leaf to a boil over medium-high heat.
2. Add the carrots and simmer until tender, about 4 to 7 minutes.
3. Add the broken pasta and cook until the pasta is tender, for 4 to 5 minutes, stirring occasionally.
4. Add the cooked chicken and heat through, about 2 to 3 minutes.
5. Remove the bay leaf and discard. Stir in the spinach, parsley and season with salt and pepper to taste.

Recipe 33. Rosemary Chicken Burger

Servings:  2
Ingredients
½ lb of Lean Ground Chicken
½ cup, plus 2 TBSP 0% Greek yogurt
2 Ezekiel or WW Burger Buns
2 TBSP Rosemary, fresh, chopped
½ cup Arugula
1 TBSP Lemon Juice
1 TBSP Garlic, minced
1 tsp Agave Nectar
½ tsp Kosher Salt
½ tsp Black Pepper

Directions
1. In a medium bowl, combine the ½ cup Greek yogurt, rosemary, garlic. Once combined, add the chicken and mix well (using hands works best).
2. Divide the mixture to make two burger patties. Cook burger patties on in door or outdoor grill until the center is no longer pink.
3. In a small bowl, combine the 2 TBSP Greek yogurt, lemon juice and agave. Use this spread as topping for the burger. Once burgers are cooked, assemble bun, burger patty, arugula and yogurt topping on each.

chicken tenders4. Coconut Almond Chicken Tenders

Servings:  2
Ingredients
2 Chicken Breast, boneless, skinless
½ cup Almond Meal
½ cup Coconut Flakes, unsweetened
1 tsp Kosher Salt
1 Egg, beaten
1 TBSP EVOO

Directions
1. Preheat your oven to 350 degrees.
2. In a small size bowl, combine almond meal, coconut flakes and Kosher Salt.
3. Slice the chicken into 3 inch long tenders. Dip the chicken pieces into the beaten egg, then into the almond-coconut meal mixture and coat evenly.
4. Heat a medium skillet to medium heat, add the EVOO.
5. Add the chicken to the skillet and brown on all sides and place in a baking dish. Bake for 15-20 min or until chicken is no longer pink and the crust is golden brown.

Recipe 55. Cheesy Spinach Stuffed Chicken

Servings:  2
Ingredients
2 Chicken Breast, boneless, skinless
3 Laughing Cow Light Swiss Cheese Triangles
1 cup Spinach, chopped
1 TBSP Garlic, minced
1 Lemon, cut in half
2 tsp EVOO

Directions
1. Preheat your oven to 350 degrees.
2. In a small size bowl, combine well the cheese, garlic and juice from half of the lemon. In another small bowl, put the spinach in the microwave to steam or 30-45 seconds. Mix the spinach into the cheese mixture and combine.
3. Slice the chicken long ways to cut a pocket for the cheese mixture. Add half of the cheese mixture into each chicken breast. Place stuffed chicken in a baking dish.
4. Brush each piece of chicken with 1 tsp EVOO. Squeeze the remaining lemon on both pieces. Sprinkle with sea Kosher Salt and pepper. Bake for 25-30 min or until chicken is no longer pink and cheese is bubbling.
