A Naked Burrito Recipe

One of the most common excuses I hear for not eating healthy is, “I don’t have time to cook healthy food.”. WRONG! So- to prove my point, I thought I’d start giving examples of easy, yummy and most importantly fast recipes you can make in under 10 minutes.

Here we go!

This recipe makes 2 servings plus leftovers!!!!

Ingredients all from Trader Joe’s:

1 pkg 94/6 Lean Beef
1 bag Frozen Brown Rice
1/2 cup Authentic Mexican Salsa
2 cups Fresh Spinach
**2 TBSP Guacamole (optional)




1. Follow the directions to cook the rice. Once done, open bag set aside to cool slightly. (takes 3 minutes)
2. While rice is cooking, heat a non-stick pan to medium. Add the ground beef and 1/4 cup of the salsa.
Using a spatula, cook the beef until no longer pink. Once beef is cooked, strain the remaining fat and set aside. (6-8 minutes).
3. Assemble: In two bowls, add 1 portion of brown rice, layer 1 cup of spinach, 1 portion of the ground beef and top with half of the remaining salsa. Mix & serve!

All in under 10 minutes. Personally I timed this recipe and it only took me 8 minutes & 30 seconds!
