Fall Sweet Potato Pancakes

Servings:  2-3 servings

1 medium Sweet Potato
8 Egg Whites
1 scp Vanilla Protein Powder
1 tsp Pumpkin Pie Spice
½ tsp Almond Extract
½ tsp Baking Powder

1. Prick sweet potato with a fork and cook in microwave for 4-5 minutes or until soft.
2. Blend all ingredients in a blender or mixer (I prefer a standing mixer). Heat a pan on medium.
3. Pour into a heated non-stick pan. Once bubbles form, flip and cook the other side.
