Kale Me Crazy!

KaleKale is truly a super food! Filled with powerful antioxidants, low in calories, high in Vitamin-K, Vitamin-C, Calcium, Fiber and Iron – what’s not to love?

Here’s a few recipes from the Jet Set Body Kitchen!

Sauteed Kale

Ingredients
1 Bunch Kale Leaves, stalk removed, cut into pieces
2 Garlic Cloves, finely diced
2 TBSP Coconut Oil
1/2 cup Low-Sodium Vegetable Stock
2 TBSP Red Wine Vinegar
Sea Salt & Pepper to Taste

Directions
1. Heat the coconut oil in large saucepan over medium heat. Add the garlic and cook until fragrant.
2. Raise the heat to medium-high, add the vegetable stock and kale and toss to combine. Cover and cook for 4 minutes.
3. Remove the cover and cook until the liquid has evaporated. Add salt and pepper to taste, as well as the vinegar. Serve warm.

Kale Chips

Ingredients
1 Bunch Kale Leaves, stalk removed, cut into pieces
Sea Salt & Pepper to Taste
2 TBSP Olive Oil

Directions
1. Heat oven to 400.
2. In a plastic bag add the kale, salt, pepper and olive oil. Toss to coat the kale.
3. Spread kale onto a cookie sheet and bake for 4-6 minutes until kale turns bright green and crispy.

Massaged Kale Salad

Ingredients
1 Bunch Kale Leaves, stalk removed, cut into pieces
1 Lemon, juiced
3 TBSP Extra Virgin Olive Oil
Pinch of Sea Salt
Black Pepper
1 tsp Honey
4 Strawberries, cut
2 TBSP Sliced Almonds

Directions
1. In large serving bowl, add the kale pieces, lemon juice, 1 TBSP of Olive Oil and a pinch of salt. Massage the kale until it starts to soften and wilt, 2 to 3 minutes. Set aside while you make the dressing.
2. In a small bowl whisk the lemon juice, honey, black pepper. Once combined, pour the remaining olive oil in while whisking.
3. Add the strawberries and almonds to the kale, then add the dressing and toss to coat. Serve chilled.

Creamed Kale

Ingredients
1 Bunch Kale Leaves, stalk removed
1 TBSP Coconut Oil
3 Garlic & herb Laughing Cow Wedges
Salt & Pepper to Taste

Directions
1. Heat a medium pot of water to boiling. Add kale and blanch until tender, rinse in ice water, drain and cut into 1/2-inch pieces.
2. Heat a medium skillet on medium heat, add the coconut oil and laughing cow wedges. Once softened, add kale.
3. Reduce heat and cook for 5 minutes to soften completely. Serve warm.

Kale Green Juice

Juice the following:
2 cups Kale, stalk removed
2 Green Apples, cut in half
1/2 cup Green Grapes
1 Celery Stalk
1/2 Cucumber
1 Lemon
1″ Ginger Root
